Zucchini nachos

Dinner yesterday was composed and centralized around one of my favorite little grilled veggies…zucchini. In barely no time at all, a filling and healthy batch of zucchini nachos was prepared and devoured. This recipe was saved under one of my many Pinterest boards (I have a slight pinning problem) and Austin and I agreed right away to just slightly tweak Two Peas and Their Pod’s recipe.

Being that I am dairy-free, gluten free, and a red meat vegetarian, Austin and I prepared two versions of this dish for my family to enjoy. The great thing about this recipe is that it can be altered and changed according to your personal preference or diet. Besides looking beautiful, this healthy form of nachos packs a serious nutritional punch. Both versions contained avocado (yay for super foods), tomato, black beansgreen onion, cilantro which are all very beneficial to our health and overall wellness.

Vegetarian/Dairy Free- Zucchini Nachos 

4 Medium sized Zucchini- sliced into chips (however thick you prefer), seasoned (vegetable oil, salt, and pepper) and grilled until soft/tender 

2 Green Onions-chopped, and slightly grilled 

2 Freshly sliced Avocado

1 Medium Red Tomato- chopped 

1/4 cup Cilantro

1 can Black Beans-rinsed (to remove extra salt and juice)

* 90% Lean Ground Beef 

*1 cup Shredded Cheddar Cheese

Grill the zucchini and while it is grilling, prepare any meat you wish to add. Once the zucchini is almost complete, add the green onions in so they too can be grilled slightly. After the zucchini is prepared to how you personally like and enjoy it, sprinkle any cheese you might want on top of the zucchini so that it melts. Complete the dish by adding the remaining freshly prepared ingredients on top of the grilled onions and zucchini chips and serve warm!

The warm zucchini mixed with the other fresh ingredients is a smashing combination. The differing textures and flavors make for a truly delicious dinner dish. Not only that, but the versatility of the recipe is top notch and can be altered and customized according to any diet or lifestyle preference. A total winning recipe in my book!
