It is time for another Copy-Cat Clif recipe! Austin and I brainstormed this afternoon and came up with the perfect recipe for a sweet, satisfying, and protein packed snack bar. Just like the rest of our homemade clif bars, they are made with a protein powder (for some extra punch) and have an oatmeal base.
One of my many challenges in life would have to be my desire and longing for peanut butter…and also chocolate. Fun fact, throughout grade school and middle school everyday for lunch I would eat a peanut butter and chocolate chip sandwich (try it, it will change your life). Now today I have come to realize that this probably wasn’t the healthiest choice that I’ve made in my 20 year span of life, but it has shaped me into the person I am today. (: Also, since day 1 I have gotten a gold metal in picky eating, so at least it was something I would consistently and gladly gobble up!
When Austin suggested something with both peanut butter and chocolate in it, my heart leapt for joy. I knew right then, at that moment, that Austin was indeed a good boyfriend. After making these bars they have hands down become our favorite.
Like the rest of our clif recipes there is no right or wrong amount of ingredients. In our opinion the best bet is to mix everything so that it is evenly distributed throughout the bar. For example nothing…and I mean nothing is worse than when you bite into something like a chocolate chip cookie and get no chocolate. So it is critical that you add as much as you’d like and really intermix everything.
After all the ingredients (listed below) are mixed together in a large bowl they should create a sticky, yet malleable consistency. This mess of goodness, is then pressed firmly on a slightly greased cookie sheet. Make it as thick of thin as you would like, but remember since it is yeast free/flour free it will not rise much at all. So what you see is what you get!
Preheat and set the oven for 300 degrees, and bake the clif bar for 10 minutes. Immediately place the cookie sheet into the freezer so the chocolate and peanut butter pieces can solidify. After cooling in the freezer for 10-15 minutes if you would like, and I highly recommend it, drizzle melted white chocolate over the solid clif bars. Finish off by melted some peanut butter and peanut chips in the microwave for 30 seconds and proceed to drizzle this over the bar as well.

Then after the drizzle solidifies, you can enjoy these treats guilt free! Not only are they made with lots of different healthy ingredients, but they are also filled with protein and fiber to get you through the day!
