Round two of creating and baking delicious homemade Clif bars. Again I wanted to incorporate some protein powder to get that extra bit into my diet. In order to compliment the entire bar I decided I would use a vanilla flavored protein. Optimum Nutrition Whey Vanilla Gold Standard Protein was implemented, and this coupled with the cranberries and dark chocolate chunks really made a smashing combination.
If you cannot recall from the first Copy Cat Clif bar recipe I posted, these bars are on a throw together basis. Meaning there really aren’t really any real measurements, instead, it is more about getting the ingredients into a consistent mixture. There should be a decent amount of each ingredient present and visible in each bite of yummy bar. Although a bar filled with tons of chocolate chunks is alright with me… one without any is just terribly sinful so it’s important everything is mixed together well.
In my opinion these Dark Chocolate Cranberry Almond Clif bars contained the perfect combination of ingredients. Our batch of Copy Cat Clifs were inhaled. By inhaled I mean eaten entirely within two days…utterly annihilated. Everyone that ate the bars raved about how great the bars were and asked for the recipe. Needless to say, these bars caused happy stomaches and happy people. Just a side note, I recommend putting the bars into the freezer and eating them cold. This adds a completely new element and makes this treat even better! I do the same with all of my Clif bars from the store, eating them cold for some unknown reason makes the flavors very distinct and gives them a bit more texture and chew. Try it out ASAP!
2 Tablespoons Flax Seed
Raw Oats (this serves as the base for the bars so add this first to indicate how much of everything else you need)
Natural Dark Chocolate Chunks
Ocean Spray Reduced Sugar Ocean Dried Cranberries
Raw Unsalted Whole Almonds
Raw unsalted Salted Sesame Seeds
Reduced Sugar Maple Syrup
Water (to soften and make the oats more malleable)
Optimum Gold Standard Vanilla Whey Protein
White Chocolate Bark (to drizzle over the bars once they are out of the oven and cooled)
Preheat the oven to 300 degrees and bake on a greased baking sheet for 5 minutes. Remove bars and place in the freezer for 10 minutes or until firm and solid, the chocolate chunks should not be melty. Proceed to warm up the almond bark according to manufactures guidelines, and use a fork to drizzle white chocolate over the Copy Cat Clifs, as to add that final and delicious touch.
